Pumpkin Whoopie Pie
What is a whoopie pie? Is it a cookie, pie, sandwich, or cake? All I know is that these things are scrumptious, especially in pumpkin season. Feel free to find out more about the whoopie pie.
02 Preparation
- In large bowl, gently whisk all ingredients until just combined.
- Let batter sit for at least 3-5 min.
03 Performance
Melt butter. Drop 1/8 cup of batter onto melted butter. Flip after 3 min (8 min total). Place on cooling rack to cool. Generously frost a pancake with the cream cheese frosting and place another on top to make a sandwich. This recipe makes about 24 pancakes/12 sandwiches.
